Creamy Raw Nut & Seed Spiced Butter (Nut Free Option)

Ingredients
  

Base ingredients:
  • 2 cups mixed nuts and seeds of choice (unsalted, not roasted). I have given some suggestions below, but you can use any other nuts and/or seeds you like. For a nut-free option, blend seeds only.
Nuts:
  • Peanuts, almonds, cashews, brazil nuts, hazelnuts, pecans, walnuts, pistachios, macadamia
Seeds:
  • Pumpkin seeds, sunflower seeds, hemp seeds Note: Chia and flax seeds are too small and dry to blend into a smooth, creamy butter on their own. They lack enough natural oils to liquify, but you can make a delicious seed butter by blending them with sunflower or pumpkin seeds – which have high oil content – or by adding a little oil, such as extra virgin olive oil. Use chia and flax powder as the seeds will leave lumps in the butter.
Optional herbs, spices & nutritional powders:
  • For added flavour and a nutritional boost, add ground herbs, spices and nutritional powders to your butter. I have given some examples below.
Chai spiced butter:
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp ground coriander
Superfood butter:
  • 1 tsp maca powder (adds a caramel-like taste and provides an energy or mood boost)
  • 1 tsp lucuma powder (an antioxidant-rich natural sweetener)
  • 1 tsp cacao powder (offers antioxidants and a rich flavour)
  • 1 tsp berry or mushroom powder (offers antioxidants and immunity support)

Method
 

  1. Blend the raw nuts and seeds, and any flavourings you wish, in a dry food processor. Every few minutes, stop to scrape down the sides with a rubber spatula.
  2. Repeat until the butter completely smooth and creamy. The process often takes around 20 minutes.
  3. Allow the butter to completely cool to room temperature, then transfer it to a dry storage container. Avoid adding any moisture to the jar to keep the butter fresh.

Notes

  • For salted butter, blend ¼ teaspoon of fine salt (I prefer Celtic or Himalayan salt) into the butter. Taste and add more if desired.
  • For sweetened butter, blend 1 tablespoon pure maple syrup into the butter.
